Summer 2008 Schedule

The Ice House Wine and Cheese Shop is completely stocked with wines and cheeses from all over the world and is open Tuesday to Saturday from 10 AM to 5 PM.

Unless otherwise indicated, all classes are held at Blueberry Point from 5:00 - 8:30 PM on Mondays and Tuesdays and are priced at $80 per two night session, or $50 for one night.


May 24 (Saturday), 2-5 PM:
Our first wine and cheese tasting of the season at The Ice House Wine and Cheese Shop. No charge. Call for details.

June 2 (one night class) - Couples Cooking:
Back by popular demand. This evening, everyone will get involved to produce an elegant meal. Even reluctant chefs will have fun in our kitchen with their spouse or significant other. We'll serve up a delicious five course meal with recipes you can enjoy together or with company.

June 3 (Tuesday), "Catering - Chef's Night Out"

June 11 (Wednesday), 12-2 PM:
Wine Seminar hosted by Riedel Stemware: The fee of $25 includes a sampling of fine wines, hors' d'oeuvres and a set of elegant wine goblets.

June 16 - 17:
The Fishmonger : Seafood Techniques: How do you select and prepare the freshest possible delights from the sea? We'll explore all manner of fish preparations: boning, filleting, curing, sauteing, poaching and baking. The menus will be original, varied and delicious and you'll have all the recipes to duplicate at home.

June 23 (one night class):
Around the world I - Cuban Cuisine: Cuba's rich and diverse cuisine highlights influences from the Spanish, Portuguese, and British invaders as well as from Africa. You'll find Cuban cuisine features healthy food enhanced by simple preparation methods that you can enjoy at home.

June 24 (Tuesday), "Catering - Chef's Night Out"

June 30 (one night class):
Around the world II - Normandy: Normandy boasts honest, hearty French cuisine bursting with the flavors of butter, cream, apples and calvados. The wonderful seafood of the North French coast has much in common with our coast of Maine.

July 1 (Tuesday), "Catering - Chef's Night Out"

July 7 (one night class):
Asian Fusion: We combine regional cuisines into a single eating experience. Asian fusion features Indian, East Asian and South East Asian dishes alongside one another to create inspired and delicious menu combinations.

August 4 - 5:
Kids' Culinary Camp I: (in support of Eastport Arts Center Summer Youth Program 2008; hours 10:00 AM - 12:30 PM): Can you survive in your kitchen and turn out a healthy and tasty meal for your family? You'll have fun while you learn basic knife skills, bake yummy desserts and create simple nutritious meals you can duplicate at home. Parents are invited to sample the day’s specialties at the end of each class. ($30 per student per two day class. Minimum age 9 years. Enrollment limited, pre-registration required)

August 6:
One night class. Kid's Cook Dinner: Culinary Camp II: (in support of Eastport Arts Center Arts Bloom Program 2008) Hours: 4:00 - 7:00 PM
An international culinary Adventure. We'll create a very special menu with flavors from Latin America, Europe, and Asia, using ingredients available at your local supermarket or your home garden. You'll leave with new enthusiasm, cooking skills, recipes and super marketing tips your family will appreciate. This is a class for aspiring chefs 10 years and older. The class is open to parents also if space is available. (Please inquire.) Enrollment limited, pre-registration required. ($30 per student.)

August 18 - 19:
Healthy Decadent Dinners: An oxymoron? Not at all! You don't have to deprive yourself to be healthy and trim. We'll create a delicious 5 course dinner while keeping our eye on those dreaded calories.

August 25 - 26:
Lobster Festival: Always one of our favorite weeks!:
Monday will feature mouth-watering lobster specialties from Lobster Gazpacho to Baked Lobster Napolean. Hot dishes and cold, lobster always!
Tuesday is Bouillabaisse night – The very best Bouillabaisse with fresh local lobster, mussels, clams and haddock and homemade French bread. Need we say more! ($50 per class)

September 2 (one night class):
Soups from the Kettle:Cold, hot, light, hearty. We'll create soups for every discerning palate.

September 9 (Tuesday), "Catering - Chef's Night Out"

September 15 - 19:
Elderhostel Program - A Culinary Escape on Passamaquoddy Bay (www.elderhostel.com):
"Commuter students" are welcome. Call for details. Individual evening classes are $50 per student.
